How To Make Elderflower Wine
Add 1.4kg sugar, now stir until sugar is dissolved fully.
Add Elderflowers and stir. (the smell is incredible)
Leave to stand and cool to 20°c
Now add 2 juiced lemons and grated rinds.
Add 60ml grape juice concentrate.
Add the stewed tea.
After 2 or 3 hours add one campden tablet (crushed) and stir.
Wait 12 hours then mix in the yeast nutrient.
Now add the yeast by sprinkling it on top leaving for 10 minutes then stir the mixture.
Ferment in loosely covered fermentation bin for around a week.
Strain off the elderflower must into a clean demijohn.
Fit bung and airlock and leave in warm position to ferment for around 2 weeks.
Rack into a clean demijohn.
When the elderflower wine is completely clear rack again.
Leave for a further 2 months before considering bottling on.
Elderflower wine recipe is a wonderful homemade wine for foraging enthusiasts. Elderflowers can be found growing in the countryside very easily. Its a refreshing white wine with a wonderful bouquet. But the best part of this wine is it can be made at minimal cost. Elderflower wine should be made in early summer. As that is when they can be found growing profusely in the hedgerows and fields of England, Scotland, Wales, Northern Ireland. It can also be found in most of mainland Europe and North America, and probably lots more areas than that.

0.28 litres/½ pint of elderflowers
4.5 litres/8 pints boiling water
1.4kg/3lb sugar
500g/½lb rasins or sultanas
60ml of white wine concentrate
2 grated rinds of unwaxed lemons
2 campden tablets
1 cup of stewed tea (no milk or sugar)
1 tsp white wine yeast
1 tsp yeast nutrient
Juice of 2 lemons
Sweetness: Medium
Calories per bottle: 400 approx
